2 medium carrots peeled & chopped

Half a swede peeled & chopped

1 medium onion peeled & chopped

2 cloves of garlic, peeled but NOT chopped

A few sprigs of chopped fresh thyme

1 litre of vegetable stock

Salt

Pepper

Extra virgin olive oil

This is a great soup that is so healthy. Your own 5 a day in a bowl, with no effort and maximum taste! My version is a chunky soup, with the chunks of veg giving this soup a lovely bite. This soup proves that vegetables are not boring!

Preheat your oven to 200c. Spread the chopped veg onto a baking tray and drizzle with a little extra virgin olive oil. Season all over with a good pinch of salt & pepper before cooking in the oven for 15 minutes.

After 15 minutes the veg should have just started to get some colour on it so remove from the oven and add to your large pan on the hob. Add in the stock, bring to the boil and simmer for 10 minutes. After 10 minutes the veg should be nice and soft so all that's left to do now is blend half the soup.

Either use a stick blender or roughly remove half, blend in your food processor before adding it back in with the unblended half. Add a good pinch of salt and pepper and serve!
