230g of salmon fillets
500g courgette, sliced with a mandolin then finely sliced like spaghetti.
1 x 400g tin of chopped tomatoes
1/2 a teaspoon of hot chilli powder
A small handful of chopped fresh parsley.
1 teaspoon of rapeseed oil
Salt
Pepper

This lovely, simple recipe replaces pasta with courgette strands and contains only 294 calories per person. Succulent grilled salmon with a punchy tomato sauce, on a bed of gorgeous courgette spaghetti. This is food that tastes good, looks good and is good for you! This is a two part recipe. In part 1 we cook the courgette and start cooking the salmon and in part two we finish everything off and serve

Before you start have all the ingredients out and prepared. Put a large pan of boiling water on the hob, put your small saucepan on the hob (off the heat) and turn your grill on to high. Now click here!

This is a great dish packed with flavour - all you have to do is throw a bunch of ingredients in a pot and let them cook for a couple of hours and the result is magic! Slow cooked lamb shoulder, with the sweetness of apricot and the gentle heat of cayenne pepper - this dish will warm up your senses in no time.

Preheat your grill to high. Have a pan of salted boiling water on the hob along with another pan to cook the tomatoes.
Season the salmon on both sides with salt and pepper then put them under the grill for 2.5 minutes. Once you've put the salmon under the grill, put the courgette spaghetti into the boiling water for 1 minute. Whilst the courgette is cooking, put the chopped tomatoes and chilli powder into the other pan on a medium heat.
After a minute, drain the courgette and leave it in the colander until you need it. Turn the salmon and grill for another 2.5 minutes.
Once the salmon is cooked, remove to a board and gently flake chunks of it into the pan of chopped tomatoes. Add a pinch of salt and pepper.
Fold the salmon and tomatoes together, taking care not to completely break up the fish. Add in the chopped parsleyand carefully stir.
To serve, place some of the courgette spaghetti into your bowl or plate and spoon the salmon & tomatoes on top.
